Healthy Snacks You can Make in 20 Minutes or Less

Eating healthy doesn’t mean you can enjoy something tasty.  There are many snacks that you can make yourself that are easy, delicious, and healthy. 

 Below are a few recipes that you can enjoy whenever you need a snack and are on the go:

Nutrient packed oatmeal bites

These are so easy to make.  All you do is mix all of the ingredients below together.

1 Cup Oats (Quick cooking works best, but I have used steel oats)

1 Cup Coconut Flakes

½ Cup Ground Flaxseed

1 tsp. cinnamon

½ Cup Natural Peanut Butter, can be crunchy or smooth

1/3 Cup Honey

1 tsp. Vanilla

You can mix in chocolate chips, dried cranberries, or raisins after you mix the above ingredients.  Put in approximately ¼ cup. Roll dough into 1 inch balls. Put into an airtight container and refrigerate.  That is all there is to it. Double or triple the batch to freeze so you have a snack ready any time!  If you freeze, allow 15 – 20 minutes to defrost.


Banana Snack Cake

1 ½ Cups Oats (quick cooking oats works best, but I have used Steel Oats)

1 ¼ Cups Flour (Can be wheat, almond, coconut, oat, etc.)

2 tsp. Baking Powder

1 tsp. Cinnamon

1 Tbsp. Coconut Oil

2 Tbsp. Ground Flaxseed

½ Cup Vanilla Yogurt

1 Cup pureed bananas

¼ Cup Honey

¼ Cup Milk (I used Almond Milk)

Mix the first 4 ingredients together.  In another bowl, mix together the next 5 ingredients stirring well enough so there are not any lumps.  Mix the oat mixture into the wet ingredients, alternating with the milk. Grease a 8” or 9” square pan and pour the batter in.  Bake at 350 degrees for 25 – 30 minutes or until a toothpick comes out clean. Once done baking, let cool completely then slice.


Frozen Yogurt Bars

These frozen treats are super simple to make.

32 OZ Vanilla Yogurt or Greek Yogurt

1.5 cups chopped fruit (I use strawberries and blueberries)

1 cup granola

½ cup chocolate chips (optional)

Mix all ingredients in a bowl.  Line a 9 X 9 baking pan with foil or parchment paper and spread the mixture on it.  Freeze until solid.  Once frozen cut into bars, store in Ziploc bags in the freezer.
